Let me introduce you to our ‘Bali Gaytimes’, the ultimate choc banana treat. Australians will be familiar with the classic, no…… let’s call them epic, ‘Golden Gaytimes’ ice-creams. Creamy ice-cream on a stick coated in toffee and nuts. The recipe hasn’t changed over so many years, in fact the packaging still looks the same. I will confess to being an addict.
Jo Sharp aka Sharp Moves Fitness helped our kitchen goddesses create this amazing recipe. We launched it on one of Jo’s Bootcamp Bali Style Retreats and they took the naming rights. Bali Gaytimes were born, and they seriously, it has led to discussions about creating food trucks for Bali Gaytimes. Stay tuned!
This is what you need:
3 heaped tbspns cacao powder
3 tbspns honey
A drizzle of coconut oil
1 tspn palm sugar
I cup toasted crushed peanuts
Cut bananas in half or thirds depending on size. Put each piece on to a popsicle stick. Freeze.
Place the toasted crushed peanuts in a low dish. Set aside.
Combine the cacao, honey, coconut oil and palm sugar in a pan over medium heat.
Stir constantly until it becomes a runny toffee like mix. (It’s easy to burn, so watch the heat and use a good pan)
Whilst hot, roll each frozen banana in the mix until coated.
Then roll in the prepared peanuts until coated.
Return to freezer for a couple of hours.
